The Moon is Made of Cheese

makes 1 moon

1 cup shredded gruyere or cheddar cheese

3 ounces full fat cream cheese, softened

3 ounces goat cheese, softened

2 tablespoon unsalted butter, melted

1 ½ tablespoons sliced chives

zest of one lemon

1 tablespoon freshly squeezed lemon juice

¼ teaspoon fish sauce

2 tablespoons poppy seeds

silver, blue and black luster dust

paint brushes

crackers for serving

Add the shredded cheese, cream cheese, goat cheese, butter, chives, lemon zest, lemon juice and fish sauce to a medium bowl and mix with a spatula until evenly combined. Transfer the mixture to a layer of plastic wrap, then pull the plastic wrap up and twist it together at the top to form a ball. Place the ball in the fridge. Remove it from the fridge every 30 minutes and use your hands to manipulate back into a sphere until it’s hard enough to hold it’s shape on its own, after about 1 ½ hours.

Add the poppy seeds to a large bowl. Roll the firmed up cheese ball in the poppy seeds until it’s completely covered, pressing gently on the poppy seeds as you roll to help them adhere. Gently press on the ball with the back of a spoon or your thumbs to make craters. Use a paintbrush to cover the entire surface with silver luster dust. Then use the blue luster dust to create shadows on the surface and on the inside of the craters. Create even darker shadows in the craters with the black luster dust. Serve with crackers and a sense of humor.
